Hearty Vegetarian Tortilla Soup

Ingredients

  • 1 chopped onion

  • 3 cloves garlic, minced

  • 1 tbsp EVOO

  • 2 tsp chili powder

  • 1 tsp dried oregano

  • 28 oz can crushed tomatoes

  • 10.5 oz vegetable broth

  • 1 ¼ cups water

  • 3/4 cup corn

  • 1 cup white hominy

  • 4 oz can chopped green chili peppers

  • 15 oz can black beans, rinsed and drained

  • ¼ cup chopped cilantro

  • Crushed tortilla strips

  • Shredded Monterey jack

  • Sliced avocado

  • Lime

Instructions

In a medium stock pot, heat oil over medium heat.

Saute the onion and garlic until soft.

Stir in chili powder, oregano, tomatoes, broth, and water.

Bring to a boil and simmer 10 minutes.

Stir in corn, hominy, chilies, beans, cilantro, and chicken.

Simmer for 10 minutes.

Ladle soup and top with crushed chips, avocado, cheese, and lime.

You can also add soy crumbles to get the sensation of beef, to make this more like a chili.
